Basic crepe recipe
- 4 eggs
- 1 cup flour
- 1/2 cup milk (I use skim)
- 3/4 cup water
- 1/2 tsp salt
- 2 tbsp melted butter
Combine everything in a blender at high speed for several minutes. You want to develop the gluten in the flour so the crepes are elastic enough to hold together while being flipped in the pan and filled afterward. They are thin enough that being a bit elastic won't make them tough.
